Icelandic skyr is a unique dairy product that has been produced in Iceland for over 1100 years. It is high in protein, fat free, textured and tasty. Unflavoured skyr is roughly 13% protein, 4% carbohydrates and 0.2% fat. Skyr is the so-called superfood of Icelanders, as it is naturally fat-free and very high in protein. It is produced in a modern way according to a centuries-old recipe.
Frosti includes underutilized beautiful blue spirulina algae that gives the product not only its unique colour, but further increases the nutritional benefits of Frosti. Spirulina is a blue-green algae. It is very nutrient-dense and even considered a superfood. Spirulina is packed full of vitamins and minerals such as vitamin A, B, C, E and calcium, magnesium and zinc.
Research has shown that a lower fraction of A1 and β-caseins in Icelandic cow's milk may explain why there is a lower incidence of diabetes in Iceland than in Scandinavia. To us this fact is really interesting and shows the benefit of using Icelandic milk in Frosti.
It is estimated that around 75% of the human population has lactose intolerance. Lactose is a sugar found in dairy milk. A certain amount occurs naturally in cow’s milk. Some people don't have the enzyme lactase to break down the lactose, but it is possible to add the enzyme lactase to dairy. Once ingested, it helps your digestive system break down the lactose. Lactose-free milk contains the same amount of calcium, vitamin A, vitamin D and protein as regular milk and dairy products. Frosti is ideal for those who have lactose intolerance or choose a diet without lactose.
Freeze-dried skyr is a good option to increase the shelf-life of an otherwise quite unstable product. After drying the skyr all of Frosti’s organoleptic qualities e.g. smell, colour, texture and nutritional value stay the same. When skyr is freeze-dried it becomes very stable for a long period of time without adding any preservatives & no refrigeration is required. After all the water has been removed from the skyr it is 80% lighter and 5 times cheaper to export. Now it is possible to sell Icelandic skyr all over the world!
The production of spirulina is very sustainable and it has a negative carbon footprint. To grow Spirulina carbon dioxide (CO2) emissions are used from a geothermal power plant that is located next door to the production site. The CO2 would otherwise be released into the atmosphere. With the company's production methods, the only by-product is oxygen. Frosti’s mission is to prevent food waste by drying skyr that is almost expiring. Frosti has the possibility to be sold packaging-free and promote sustainability!
